Oven Fried Shrimp

I love shrimp!  I especially love fried shrimp.  But what I don't love is the mess of frying.  This recipe is so good; it's a favorite of my family.


Oven Fried Shrimp
  • 1 1/2 lbs large shrimp
  • 2 cups Panko bread crumbs
  • 1 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 cup vegetable oil
  • 2 cups Lays Kettle Cooked chips, crushed
  • 3/4 cup all-purpose flour
  • 2 large eggs
1.  Shell and devein the shrimp.  (This can be a timely process.  The larger the shrimp, the shorter the prep time.  I use 26-30.)  Place on paper towels to dry.
2.  Adjust oven rack to upper position and heat oven to 500 degrees.
3.  Place flour in a shallow dish.  In another shallow dish, whisk eggs until well combined.  Combine Panko, paprika, cayenne, and oil in microwave-safe bowl.  Microwave till golden brown and crisp, 1 to 3 minutes, stirring halfway thru.  Add crushed chips to toasted bread crumb mixture.  Set a wire rack inside a rimmed baking sheet.  (Assembly line should be in this order.)
4.  Dredge shrimp thru the flour, tapping off excess.  Dip in egg, then into the bread crumb mixture.  Place on wire rack.  Refrigerate for at least 30 minutes or up to 2 hours.
5.  Spray shrimp with Pam and bake until cooked thru, 5 to 7 minutes.
