Cinnamon Rolls Makeover

Who wants to have their cinnamon rolls and eat them too?  Me!  And I can.  And you can too … for just three easy payments of 99.99, you too can … No, I’m joking.  These yummy, delicious buns are only 290 calories per serving.  Plus, they are very easy to make.  Unlike traditional rolls made with yeast, these can be prepared in a matter of minutes and be enjoyed on any Saturday morning or as a dessert.  Enjoy! 

 

 

Cinnamon Rolls
Heat oven to 425 degrees.  Line a 8” square pan with aluminum foil and spray lightly with Pam.
Filling:
  • 1/3 cup packed dark brown sugar
  • 1/3 cup sugar
  • 2 tsp cinnamon
  • 1/8 tsp ground cloves
  • 1/8 tsp salt
Mix ingredients together and set aside. 
Dough: 
  • 1 1/2 cups all-purpose flour
  • 3/4 cup whole-wheat flour
  • 2 Tbl sugar
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk
  • 5 Tbl unsalted butter, melted and cooled 
Whisk the all-purpose flour, whole-wheat flour, sugar, baking powder, baking soda and salt together in a large bowl.  In another bowl, whisk the buttermilk and 4 Tbl of the butter
together.  Stir buttermilk mixture into flour mixture till crumbly.  Dump dough onto floured surface and knead until smooth and no longer crumbly.  Pat the dough into a 12" x 9" rectangle with the long side facing you.  Brush the dough with remaining melted butter.  Sprinkle on
filling in even layer, leaving a 1/2” border along the top edge.  Press on the filling to adhere.  Loosen the dough with a bench scraper or spatula, roll into a tight log.  Pinch seam closed and roll log over onto seam.  Using a serrated knife, slice the log into 9 rolls.  Place into prepared pan.  Cover with foil (this is very important so that the rolls don’t dry out).  Bake for 12 minutes.  Remove foil cover and bake for 12 to 18 minutes longer.  Flip rolls out onto wire rack and remove foil.  Allow to cool while preparing the glaze.
 
 
 
Glaze:
  • ¾ cup confectioners’ sugar
  • 1 oz light cream cheese, softened
  • 1 Tbl buttermilk
Whisk ingredients together till smooth.  Flip rolls onto serving platter and drizzle glaze over top.  Enjoy, but be good to your diet and eat only one.
